Yesterday

 
 
 
Yesterday was one of those days.
One of those days where you just need a cookie, or two.
Yesterday was gloomy and cold with snow flurries throughout the day.
It was a day where you want to curl up in your bed and snuggle your babies.
Unfortunately it was also one of those days where there was so much to do.
Grocery shopping
laundry
homework
dinner
piano lessons
It was also one of those days where Livie was grumpy. I'm not even sure why.
She woke up grumpy, she was grumpy at the grocery store.
She was grumpy when she woke up from her nap.
Grumpy through dinner and after.
Didn't want Daddy or anyone else.
Just Mommy, only Mom.
But I just couldn't hold her all day long.
And so she cried,
a lot
By the end of the day we were both in tears. I felt bad, even though I felt like I did the best I could that day trying to comfort her.
Mom guilt, it's the worst.
After cleaning up dinner I scooped her up in my arms, snuggled her and gave her a cookie.
I had one myself.
And you know what we both felt better.
She smiled.
I smiled.
We both had another.
Oh the power of cookies!
Now I know that we shouldn't always drown our sorrows and bad days in sugar and butter and chocolate.
But you know what? Every once in awhile it sure does help.
So today I am thankful for cookies.

Baking with Sadie

Some days just call for homemade chocolate chip cookies.
The two littles were asleep and Hallie stayed after school for Science Ambassadors so Sadie and I were left alone for a bit. I enjoyed so much spending this alone time with her. One on one time is rare around here so it's always cherished time to spend one on one with each of the kids.

Zucchini and cookies

Our zucchini plant has done a fabulous job this year, we have had oodles of zucchini. Today I grated and froze a bunch and I still had some left, so we made cookies. They were tasty and 2 out of the 3 kiddos thought so to, despite the "green sprinkles" (that's what I called them). This little cookies monster ate a few to many.
Zucchini Cookies
3 eggs
1/2 cup oil
1 cup sugar
1 cup brown sugar
1/2 cup applesauce
2 cups grated zucchini
3 tsp. vanilla
4 cups flour
1/2 tsp. baking powder
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1-1 1/2 cup chocolate chips

Preheat oven to 350 degrees. Beat eggs well and then add oil, sugars, applesauce, vanilla and zucchini. Mix well. Add dry ingredients and mix well again. Stir in chocolate chips. Bake for 10-12 minutes.
Today I used whole wheat flour and 2/3 cup agave instead of the white sugar to "healthify" them a bit.
