Over the weekend...

we headed  north, dropped the kiddos off at Grandma and Grandpa's and then
the hubs and I played.
We went to the Utah/USC game, not the greatest game, but fun to be there.
We stayed in a fancy hotel, which we never do, but we had a discount so we went for it. Crazy how expensive it was even with a discount!
We stayed in the Grand America and boy was it fancy.

They even give you chocolate every night.
Then we went to Park City and rode our mountain bikes. The trail we went on was
a bit over 8 miles. It was beautiful. The weather was cool and crisp and the leaves were so pretty.
I only crashed once! Better than I anticipated. :) Such a good time.

After that we shopped, ate yummy food, slept in, and just
enjoyed hanging out, kid free.
Saturday afternoon, we went out to Jake's parents where the kiddos were.
Sunday afternoon Hallie and I went to General Conference.
That was one of the things she asked for, for her birthday way back
in May. So we went! It was great to be there. Hallie liked seeing all the apostles and
President Monson. She was amazed at all the people. It's amazing how many
people they can fit it the conference center.

And that was our fabulous weekend...
Now it's back to reality.

Granola

My favorite thing for breakfast lately is homemade granola (recipe found here)
I really like this recipe, not too sweet, and low fat and super yummy. I like mine with apples or peaches or berries.

The little man likes it too :)

Thoughts...

Motherhood

I came across this on pinterest and loved it.
Being a Mom has taught me so much.
Things that I couldn't have learned any other way.
Some days are good and some days are great
and some days are well, not so great.
I lose my patience, I don't make dinner, the laundry is piled up,
the house is a mess, the kids don't listen to me,
they fight, and the list goes on.
I'm thankful that each day is a new start, the chance to be better than the day before.
A chance to see things in a new perspective and to realize that
the things I do everyday really do matter and can make a difference...
I like this quote
"It may seem simple, all the little things you do.
But the lives you touch matter so much,
and there's no one else like you.
And Father needs you to be strong and faithful, to be all you can be.
Oh, if you could seen what He sees.
You'd believe in what you're doing.
You'd believe in who you are.
Hold tight to the truth that you're a daughter of God.
Believe in who you're becoming.
Believe in who you are."

Have a great day!

projects

skirts for the girls for family pictures

a bench for the dining room table

a side table for one of Jake's co-workers
With the kids back in school and a little guy that takes a good nap I've been able to tackle some projects. Running and DIYing are my sanity and keep from being a grumpy, stressed out mommy. :)

Sunday..

I love Sundays.
Going to church as a family,
playing together,
napping,
eating good food together.
Sundays always make we want to make something yummy.
I went out to the garden to see what was there and picked a bowl full of veggies.
So that was our dinner, a bowl full of garden veggies and a pesto grilled cheese sandwich on the side.

Garden Vegetable Soup

1 onion, chopped
2-3 cloves garlic, minced
1 green pepper, chopped
1 medium yellow squash, chopped fairly small
1 medium zucchini, shredded
2 medium carrots, shredded
1/2 to 1 cup brocoli, chopped
1-2 cups corn
1 tsp. salt
1/2 tsp. pepper
dash of red pepper flakes for a bit of a kick
about 3 cups chicken stock
2-3 T. butter
about 2 cups milk
a big handful (or 2) of grated chedder cheese

Saute veggies and garlic in a good amount of oil oil until they are mostly tender. Add salt and pepper and red pepper. Add chicken stock and bring to a boil. Let simmer for about 5 minutes. In seperate pan melt butter, add a few tablespoons of flour to make a roux. Add milk and whisk until combined. Add roux to the veggies and stock. Bring to boil and let simmer until thickened. Turn down to low and add cheese. Stir until melted. If really thick add some more milk or water.

And for dessert, an oatmeal chocolate chip pizookie!
With ice cream and caramel on top
So yummy.

Oatmeal chocolate chip pizookie
1/3 cup butter, brown in a pan over the stove for a nutty, rich flavor
1/4 cup sugar
3/4 cup brown sugar
1 egg
1 tsp. vanilla
1 1/2 cup flour
3/4 tsp. baking soda
1/4 tsp. salt
1/3 cup oats
1 cup chocolate chips, I like dark chocolate chips
Mix sugar with browned butter. Mix in egg and vanilla. Add dry ingredients until combined. Stir in oats and chocolate chips.
Bake in a pie or tart dish at 350 degrees for about 15 minutes.
Serve warm with ice cream
